Apricot Dijon Glazed Salmon

A vibrant dish combining sweet apricot preserves and tangy Dijon mustard to create a delicious glaze for salmon.

Ingredients

  • Salmon Fillets (4 pieces)
  • Apricot Preserves (1/2 cup)
  • Dijon Mustard (2 tablespoons)
  • Soy Sauce (1 tablespoon)
  • Garlic (2 cloves, minced)
  • Olive Oil (1 tablespoon)
  • Salt and Pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare a baking sheet lined with parchment paper or aluminum foil.
  3. Mix the apricot preserves, Dijon mustard, soy sauce, minced garlic, olive oil, salt, and pepper until smooth.
  4. Place salmon fillets on the baking sheet, skin-side down.
  5. Glaze each salmon fillet generously with the apricot glaze.
  6. Bake for approximately 12-15 minutes until salmon flakes easily.
  7. Broil for the last 1-2 minutes for extra color.
  8. Rest the salmon for 5 minutes before serving.

Notes

Serve over quinoa or a green salad, and drizzle with additional glaze if desired.
