Asian Chicken Crunch Salad

A vibrant and colorful salad featuring tender chicken, crunchy veggies, and a flavorful dressing, perfect for meal prep or gatherings.

  • 2 cups cooked chicken, shredded
  • 1 cup edamame, shelled
  • 2 cups mixed salad greens
  • 1 cup bell peppers, sliced
  • 1 cup carrots, shredded
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup peanuts, chopped
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon peanut butter
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by adding cooked and shredded chicken to a mixing bowl.
  2. Make the dressing by whisking together sesame oil, soy sauce, peanut butter, rice vinegar, honey, salt, and pepper in a small bowl.
  3. Chop and slice the veggies: bell peppers, green onions, and cilantro, and shred the carrots.
  4. Combine salad greens, edamame, bell peppers, shredded carrots, green onions, cilantro, and chopped peanuts in a large mixing bowl. Pour the dressing over the top.
  5. Finish and plate the salad, adjusting salt and pepper to taste.
  6. Chill for 10 minutes before serving if time allows.

Notes

Enjoy this salad fresh for the best texture. For a vegan version, substitute chicken with tofu and honey with maple syrup.
