  • 1 Cup Mango Juice
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon Honey
  • 2 Cloves Garlic, Minced
  • 1 Teaspoon Ginger, Grated
  • 1 Tablespoon Olive Oil
  • Salt and Pepper to Taste
  • Chopped Green Onions for Garnish

Instructions

  1. Marinate the Chicken: In a bowl, whisk together mango juice, soy sauce, honey, minced garlic, and grated ginger. Place chicken in a bag, pour marinade over it, seal, and refrigerate for at least 30 minutes.
  2. Preheat Your Oven: Preheat to 400°F (200°C).
  3. Sear the Chicken: Heat olive oil in an oven-safe skillet over medium-high heat. Remove chicken from marinade, allowing excess to drip off. Sear for 3-4 minutes on each side until golden brown.
  4. Bake the Chicken: Pour remaining marinade over the chicken, transfer the skillet to the oven, and bake for 20-25 minutes until cooked through.
  5. Prepare the Glaze: Pour marinade into a saucepan and simmer for 8-10 minutes until reduced to a thick glaze.
  6. Finish the Dish: Brush thicken glaze over chicken, allow resting for a few minutes before serving.
