Healthy Zucchini Fritters

Delicious zucchini fritters made with fresh ingredients, perfect for a healthy meal that doesn’t compromise on flavor.

  • 2 medium zucchinis
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour or whole wheat flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon baking powder
  • Black pepper to taste
  • 1/4 cup finely chopped green onions
  • 1 cup plain yogurt (Greek or regular)
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare the Zucchini: Start by grating the zucchinis using a box grater or food processor. Place the grated zucchini in a mixing bowl and sprinkle the salt over it. Allow it to sit for about 10 minutes.
  2. Squeeze Out Water: After 10 minutes, grab a clean dish towel or a cheesecloth. Place the salted zucchini in the cloth and twist to squeeze out as much liquid as you can.
  3. Mix Up the Batter: In another large bowl, combine the flour, baking powder, black pepper, Parmesan, and green onions. Then, create a well in the center and add the beaten eggs followed by the drained zucchini. Mix until everything is well combined.
  4. Heat Up the Pan: Heat about 2 tablespoons of olive oil over medium heat in a non-stick skillet.
  5. Form the Fritters: For each fritter, scoop about 2 tablespoons of the mixture into the pan, flattening it slightly with a spatula.
  6. Cook Until Golden: Cook the fritters for about 3-4 minutes on each side, or until they are golden brown.
  7. Drain Excess Oil: Remove the fritters from the pan and place them on a paper towel-lined plate to absorb excess oil.
  8. Combine Ingredients for the Yogurt Sauce: In a small bowl, mix the yogurt, minced garlic, lemon juice, and a pinch of salt and pepper.
  9. Taste and Adjust: Give it a good stir and taste! Adjust seasoning as necessary.
  10. Serve It Up: Transfer the sauce to a serving bowl, and voilà! Your dip is ready to accompany those delightful fritters.
