Blueberry Cream Cheese Bars

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine flour, oats, brown sugar, and salt in a mixing bowl. Stir in melted butter until crumbly.
  3. Press the mixture into a lined 9×9-inch baking dish. Bake for 10-12 minutes.
  4. Beat cream cheese until smooth, then mix in granulated sugar and vanilla.
  5. Add blueberries gently, then mix in baking powder.
  6. Pour the filling over the baked crust and bake for an additional 25-30 minutes.
  7. Cool for 10 minutes, then chill in the fridge for at least 1 hour before cutting.

Notes

These bars are best enjoyed with a sprinkle of powdered sugar or a dollop of whipped cream. They can also be served with vanilla ice cream for an indulgent treat.
