Crispy and flavorful Buffalo Chicken Taquitos, perfect for gatherings or a cozy night in. These delicious bites are filled with shredded chicken, buffalo sauce, and gooey cheese.

  • 1 lb cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 8 small tortillas (corn or flour)
  • Oil for frying
  • Blue cheese or ranch dressing for dipping

Instructions

  1. Prepare the Chicken Mixture: In a bowl, combine 1 lb of shredded chicken with 1/2 cup of buffalo sauce. Mix well until all the chicken is coated.
  2. Add the Cheese: Stir in 1 cup of your choice of shredded cheese.
  3. Assemble the Taquitos: Take a small tortilla and spoon 2-3 tablespoons of the chicken and cheese mixture onto the lower third of the tortilla. Roll it tightly.
  4. Heat the Oil: In a deep skillet or frying pan, heat about 1 inch of oil over medium heat.
  5. Fry or Bake: Carefully place the taquitos seam-side down into the hot oil. Fry until golden brown, about 3-4 minutes per side.
  6. Drain and Cool: Transfer the taquitos to a plate lined with paper towels. Let them cool for a minute before serving.
  7. Serve with Dipping Sauce: Provide blue cheese or ranch dressing on the side for dipping.

Notes

For a healthier option, brush the taquitos with oil and bake instead of frying. These taquitos can be assembled ahead of time and refrigerated.
