Cheesy Ground Beef and Rice Casserole

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat the oven: Start by preheating your oven to 350°F (175°C).
  2. Brown the beef: In a large skillet, add your lean ground beef over medium heat and stir until browned for about 5-7 minutes.
  3. Sauté the aromatics: Add in the diced onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
  4. Combine the ingredients: In a large bowl, mix together the browned beef, onion, rice, cream of mushroom soup, milk, 1 cup cheddar cheese, paprika, salt, and pepper.
  5. Transfer to casserole dish: Pour the mixture into a greased 9×13 inch baking dish and spread evenly.
  6. Top with cheese: Sprinkle the remaining cheese generously over the top.
  7. Bake: Slide the dish into the oven and bake for about 25-30 minutes or until bubbling and golden.
  8. Garnish and serve: Let it sit for a few minutes, then sprinkle with parsley before serving.
