The Ultimate Creamy Blueberry Cheesecake

A velvety smooth cheesecake infused with the sweetness of fresh blueberries on a buttery crumble crust.

  • 2 cups fresh blueberries
  • 1 package cream cheese (8 oz)
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup sour cream
  • 1 package crumble cookie mix
  • 1/2 cup butter (melted)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine the crumble cookie mix and melted butter in a medium bowl until coated.
  3. Press the mixture into the bottom of a greased 9-inch springform pan and bake for about 10 minutes.
  4. Beat the cream cheese in a large mixing bowl until smooth, then add sugar and vanilla extract.
  5. Add eggs one at a time, mixing well after each addition.
  6. Fold in the sour cream and blueberries gently.
  7. Pour the filling over the pre-baked crust and spread evenly.
  8. Bake for about 50-60 minutes or until the edges are set and the center is slightly jiggly.
  9. Cool in the oven with the door cracked for about 30 minutes, then refrigerate for at least 4 hours.

Notes

For a beautiful presentation, garnish with additional fresh blueberries and a dusting of powdered sugar.
