Creamy Garlic Mushroom Chicken Thighs

Tender chicken thighs in a creamy, garlicky mushroom sauce for a comforting dinner experience.

  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 8 oz fresh cremini or button mushrooms, diced
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 2 tablespoons fresh parsley or thyme, chopped (plus extra for garnish)
  • Additional salt and pepper, to taste

Instructions

  1. Prepare the chicken: Pat chicken thighs dry and season generously with salt and pepper.
  2. Sear the chicken: In a skillet, heat olive oil and butter. Add chicken, skin-side down, and cook undisturbed for 7-8 minutes. Flip and cook for another 5 minutes. Remove and set aside.
  3. Sauté the mushrooms: In the same skillet, add mushrooms and cook for about 5 minutes until browned.
  4. Add the garlic: Stir in minced garlic and cook for an additional minute.
  5. Pour in the broth: Add chicken broth and simmer for about 2 minutes.
  6. Stir in the cream: Pour in heavy cream and let it simmer for 3-4 minutes until thickened.
  7. Return the chicken: Place chicken back in the skillet, skin-side up, and let it simmer for 10-15 minutes.
  8. Final touches: Stir in herbs and adjust seasoning before serving.

Notes

Serve with mashed potatoes or a green salad for a perfect meal.
