Creamy Gnocchi with Spinach and Feta

  • 1 package of gnocchi
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Optional: Grated Parmesan cheese for serving

Instructions

  1. Boil the Gnocchi: Fill a large pot with water, add salt, and bring to a boil. Gently add the gnocchi and cook for 2-3 minutes until they float. Drain and set aside, reserving some cooking water.
  2. Sauté the Spinach and Garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds. Add fresh spinach and cook for 2-3 minutes until tender.
  3. Create the Creamy Sauce: Pour in the heavy cream and let it bubble. Add crumbled feta and stir until melted. Season to taste with salt and pepper.
  4. Combine Everything: Fold in the gnocchi, tossing to coat in the sauce. Warm through for another minute.
  5. Serve and Enjoy: Plate the gnocchi, garnishing with extra feta or Parmesan cheese.

Notes

For added flair, garnish with lemon zest and serve with warm bread or a green salad.
