Crockpot French Dip Sandwiches

Tender beef chuck roast slow cooked in savory broth, served on hoagie rolls with melted provolone cheese.

Ingredients

  • 2 lbs beef chuck roast
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 4 hoagie rolls
  • Sliced provolone cheese (optional)

Instructions

  1. Season the beef chuck roast generously with salt and pepper.
  2. Heat a skillet over medium-high heat and sear the beef on all sides for 4-5 minutes until browned.
  3. Place the seared roast into the crockpot and scatter the sliced onions and minced garlic around it.
  4. Combine beef broth, Worcestershire sauce, soy sauce, and thyme in a bowl, then pour over the beef.
  5. Cover the crockpot and cook on low for 8-10 hours or high for 4-6 hours.
  6. Shred the beef when tender and return it to the broth.
  7. Prepare the hoagie rolls; toast if desired.
  8. Fill each roll with shredded beef and top with provolone cheese, if using.
  9. Serve with a bowl of broth for dipping.

Notes

You can adjust the seasoning and broth to your taste. Great for meal prep!
