Easy Baked Breakfast Tacos

A fun and flavorful start to your day with soft tortillas filled with fluffy eggs, crispy breakfast sausage, colorful bell peppers, and melted cheese, all baked to perfection.

  • 8 small flour or corn tortillas
  • 6 large eggs
  • 1 cup cooked breakfast sausage or bacon, chopped
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/2 cup salsa
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare a muffin tin by lightly greasing it and pressing the tortillas into the cups to form taco shells.
  3. Cook the breakfast sausage or bacon in a skillet until browned, then add diced onions and bell peppers, and sauté for 3-4 minutes.
  4. Mix the whisked eggs with the cooked sausage and veggies until just set but still slightly runny.
  5. Fill the taco shells with the egg mixture and sprinkle with remaining cheese.
  6. Bake for 15-20 minutes until golden brown and bubbly.
  7. Serve with salsa and fresh cilantro.
