Easy & Healthy Coconut Chicken Curry

A comforting and flavorful coconut chicken curry that combines tender chicken with a rich coconut milk sauce, spices, and fresh ingredients. Perfect for a weeknight meal or impressing guests!

  • 1 lb Chicken Breasts, diced
  • 1 can (14 oz) Coconut Milk
  • 1 Onion, chopped
  • 3 Cloves Garlic, minced
  • 1 Tablespoon Ginger, grated
  • 2 Tablespoons Curry Powder
  • 1 Teaspoon Turmeric
  • Salt & Pepper to taste
  • 2 Tablespoons Olive Oil
  • 1 Cup Chicken Broth
  • 1 Cup Basmati Rice
  • Fresh Cilantro for Garnish

Instructions

  1. Prep Your Ingredients: Chop your onion, mince the garlic, and grate the ginger.
  2. Sauté the Aromatics: Heat olive oil in a skillet, add onion, and cook until translucent. Add garlic and ginger and sauté until fragrant.
  3. Add the Chicken: Add diced chicken to the skillet, season with salt, pepper, curry powder, and turmeric, and sauté until lightly browned.
  4. Pour in Coconut Milk & Broth: Stir in coconut milk and chicken broth and let it sink in as it simmers for about 10 minutes.
  5. Simmer & Cook Rice: Cook basmati rice according to package instructions while the curry simmers.
  6. Adjust Seasonings: Taste your curry and adjust salt and spice as desired.
  7. Serve It Up: Ladle curry over fluffy rice and garnish with fresh cilantro.

Notes

For a vegetarian version, replace chicken with chickpeas or veggies. To increase spiciness, add chili. The simmering time is crucial for flavor development.
