Flourless Cottage Cheese Pancakes

Light, fluffy, and packed with protein, these Flourless Cottage Cheese Pancakes are perfect for a satisfying breakfast or post-workout snack.

Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup oats
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Butter or oil for cooking

Instructions

  1. Blend the cottage cheese, eggs, oats, baking powder, vanilla extract, and salt in a blender until smooth.
  2. Heat a non-stick skillet over medium heat and add butter or oil.
  3. Pour about 1/4 cup of batter onto the skillet and cook until edges set and bubbles form (3–4 minutes).
  4. Flip the pancake and cook for another 2–3 minutes until golden brown.
  5. Repeat with remaining batter, keeping pancakes warm in a low-heat oven.
  6. Serve warm with your favorite toppings.

Notes

Try adding blueberries, chocolate chips, or nuts for variations. Keep pancakes warm in the oven while cooking the rest.
