French-Style Potato and Green Bean Salad

A vibrant and delicious salad combining the earthiness of potatoes with crisp green beans, all dressed in a tangy Dijon vinaigrette, perfect for any gathering.

  • 2 pounds waxy potatoes, diced
  • 1 pound green beans, trimmed
  • 1/4 cup Dijon mustard
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • Fresh herbs (parsley, chives, or dill), chopped

Instructions

  1. Boil a large pot of salted water and add the diced potatoes. Cook for about 10–12 minutes until fork-tender.
  2. Add the trimmed green beans with about 5 minutes left of cooking time.
  3. Drain the pot and allow the potatoes and beans to cool for a few minutes.
  4. Whisk together the Dijon mustard, red wine vinegar, and olive oil in a mixing bowl.
  5. Combine cooled potatoes and green beans in a bowl, drizzle with the dressing, and toss gently.
  6. Season with salt, pepper, and chopped fresh herbs.
  7. Chill for at least 30 minutes to let flavors meld before serving.

Notes

This salad can be served warm, at room temperature, or cold. Great for potlucks and gatherings!
