  • 1 pound Baby potatoes
  • 4 tablespoons Unsalted butter
  • 3 cloves Garlic, minced
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Dried thyme
  • 0.5 teaspoon Dried rosemary
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Beef broth
  • 1 tablespoon Olive oil

Instructions

  1. Prep Your Ingredients: Start by cutting your beef into bite-sized pieces (if you haven’t already), halving the baby potatoes, and mincing the garlic.
  2. Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the beef cubes, seasoning them with salt and black pepper, and let them sear for 4-5 minutes.
  3. Add Flavor with Garlic & Spices: Once the beef is browned, add the minced garlic, onion powder, smoked paprika, thyme, and rosemary. Stir and let toast for 1-2 minutes.
  4. Incorporate the Potatoes: Add the halved baby potatoes to the skillet, stirring to ensure they are coated in the flavorful mixture.
  5. Pour in Broth: Pour the beef broth into the skillet, stir, and bring to a bubbling simmer. Cover and cook for 20-25 minutes.
  6. Create the Garlic Butter: While cooking, melt the unsalted butter in a saucepan over low heat, then set aside.
  7. Finish It Off: After 25 minutes, uncover the skillet, drizzle the melted garlic butter over the dish, and gently toss. Let sit for another 5 minutes.

Notes

Serve with fresh chopped parsley and crusty bread to soak up the garlic butter sauce.
