Garlic Parmesan Roasted Zucchini

Transform humble zucchini into a flavorful side dish with garlic and Parmesan, roasted to perfection.

  • 4 medium zucchinis
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse your zucchinis under cool running water, then pat them dry. Slice them in half lengthwise and cut them into half-moons about ½ inch thick.
  3. Combine the zucchini, olive oil, minced garlic, salt, pepper, and Italian seasoning in a large mixing bowl. Toss well until evenly coated.
  4. Line a baking sheet with parchment paper and spread the zucchini in a single layer.
  5. Roast for about 20-25 minutes, tossing halfway through for even cooking.
  6. Sprinkle the grated Parmesan cheese over the zucchini while still hot.
  7. Return to the oven for 3-5 minutes, until the cheese is melted and slightly golden.
  8. Taste and adjust salt and pepper before serving.

Notes

Great served alongside grilled meats or pasta. Feel free to experiment with different cheeses or spices.
