Greek Chicken Bowls

A vibrant and flavorful dish featuring juicy marinated chicken, crunchy veggies, tangy feta, and creamy tzatziki, perfect for effortless dinners and gatherings.

  • 1 lb chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 bell pepper, diced
  • 1 cup feta cheese, crumbled
  • Fresh parsley for garnish
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • Lemon juice to taste
  • Salt to taste

Instructions

  1. Marinate the chicken by combining the olive oil, oregano, garlic powder, salt, and pepper in a bowl.
  2. Add the chicken breasts and make sure they’re evenly coated.
  3. Cover and let them marinate for at least 30 minutes (or even overnight in the fridge for maximum flavor).
  4. Cook the chicken in a grill pan or skillet over medium-high heat for about 6-7 minutes on each side until cooked through.
  5. Prepare the tzatziki by mixing the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and pinch of salt in a bowl.
  6. Assemble the bowls by slicing the cooked chicken and starting with a base of quinoa or rice.
  7. Pile on the cherry tomatoes, cucumber, red onion, bell pepper, and feta cheese.
  8. Top with the sliced chicken, drizzle with tzatziki, and garnish with fresh parsley.

Notes

Serve with extra lemon wedges on the side for guests who enjoy a citrusy punch.
