  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 1 cup cooked rice or quinoa
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, sliced
  • Tzatziki sauce for serving

Instructions

  1. Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef or lamb with breadcrumbs, grated Parmesan cheese, chopped parsley, dried oregano, garlic powder, onion powder, and salt and pepper.
  2. Form the Meatballs: Shape the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.
  3. Bake or Sauté the Meatballs: Preheat your oven to 400°F (200°C) and bake for 20–25 minutes, or sauté in olive oil for 5-7 minutes on each side until golden brown.
  4. Prepare the Base: Cook your rice or quinoa according to package instructions.
  5. Assemble Your Bowls: Start with a scoop of rice or quinoa in each bowl, top with meatballs, diced cucumber, cherry tomatoes, and sliced red onion.
  6. Add the Tzatziki Sauce: Spoon over tzatziki sauce and drizzle with olive oil.
