Hawaiian Guava Cake

A vibrant and flavorful cake that captures the essence of the islands with its sweet guava flavor and tender texture.

  • 1 box Strawberry Cake Mix
  • 1 cup Guava Nectar or Guava Juice (for the batter)
  • 3 large Eggs (room temperature)
  • 1/2 cup Coconut Oil (melted)
  • 8 oz Cream Cheese (room temperature)
  • 1/2 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 2 1/2 cups Guava Nectar or Guava Juice (for the glaze)
  • 1/2 cup Granulated Sugar (for glaze)
  • 2 tbsp Cornstarch
  • 1/4 cup Water (for slurry)
  • 8 oz Cool Whip (thawed)
  • 1 cup Sweetened Coconut Flakes (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Mixing the batter – In a large mixing bowl, combine the box of strawberry cake mix, 1 cup of guava nectar, room-temperature eggs, and melted coconut oil. Whisk together until thoroughly blended.
  3. Baking the cake – Divide the batter evenly between the prepared cake pans. Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
  4. Cool it down – Once done, remove the cakes from the oven and allow them to cool in the pans for about 10 minutes.
  5. Make the guava glaze – In a saucepan, combine the 2 1/2 cups of guava nectar and 1/2 cup of sugar. Heat over medium heat until the sugar dissolves.
  6. Thicken the glaze – Stir in the cornstarch slurry and bring to a gentle simmer, stirring until it thickens.
  7. Glazing the cake – Place one layer on a serving plate and pour a generous amount of guava glaze over it.
  8. Add the cream cheese topping – Beat softened cream cheese with vanilla extract and spread over the first layer of cake.
  9. Top it off – Place the second layer on top and pour the remaining guava glaze over the entire cake.
  10. Finish with Cool Whip and sprinkle sweetened coconut flakes on top.
  11. Slice and serve after letting it sit for a bit to meld the flavors.

Notes

Feel free to replace guava juice with other tropical juices and experiment with toppings.
