Sticky Sweet Honey BBQ Chicken with Garlic Parmesan Potatoes

A comforting dish featuring succulent chicken breasts glazed in a sticky-sweet honey BBQ sauce, paired with crispy garlic parmesan potatoes.

  • 4 chicken breasts, boneless and skinless
  • 1 cup honey BBQ sauce
  • 2 pounds potatoes, cubed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper.
  3. Glaze half of your honey BBQ sauce over the chicken breasts.
  4. Roast the chicken for about 25-30 minutes, until the internal temperature reaches 165°F (74°C).
  5. Cube the potatoes into even-sized pieces.
  6. Toss the cubed potatoes with olive oil, minced garlic, salt, and pepper.
  7. Spread the seasoned potatoes on a baking sheet in a single layer.
  8. Bake for 20-25 minutes, flipping halfway through.
  9. Sprinkle mozzarella and Parmesan cheese on top of the potatoes and return to the oven for 3-5 minutes until melted.
  10. Glaze the chicken again with the remaining BBQ sauce.
  11. Serve the chicken alongside the cheesy potatoes, garnished with parsley.

Notes

For extra flavor, try marinating the chicken in BBQ sauce for a few hours before cooking. Adjust the seasoning to your taste.
