  • 1 medium onion (small diced)
  • 2 teaspoons ginger (grated)
  • 3 garlic cloves (minced)
  • 1 tablespoon garam masala
  • 1 teaspoon chili powder
  • 1 teaspoon mustard seeds
  • 1 teaspoon coriander
  • 1 teaspoon curry powder
  • 2 pounds chicken breast (cut into ¾-inch chunks)
  • 3 ounces tomato paste
  • 3 ounces red curry paste
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 (14-ounce) can coconut milk
  • Rice or naan for serving
  • Cilantro (for garnish)

Instructions

  1. Start with the Sauté: In a large pan, melt the butter and olive oil over medium heat until fragrant.
  2. Add Onions: Toss in the diced onions and sauté until golden and caramelized, about 5-7 minutes.
  3. Mix in Garlic and Ginger: Add the grated ginger and minced garlic, sauté for an additional 1-2 minutes.
  4. Spice It Up: Add garam masala, chili powder, mustard seeds, coriander, and curry powder, stirring to release flavors.
  5. Chicken Time: Add chicken chunks, stir to coat and cook for about 7-10 minutes until no longer pink.
  6. Add Tomato Pastes, Salt, and Peppers: Incorporate the tomato paste and red curry paste, let cook for 2-3 minutes.
  7. Coconut Dream: Pour in the coconut milk and let it simmer on low heat for about 15-20 minutes.
  8. Taste and Adjust: Taste the dish and adjust seasonings as needed.
  9. Serve It Up: Serve in a bowl topped with fresh cilantro.
