Juicy Cucumber Caprese Salad

A refreshing twist on the classic Caprese salad with crunchy cucumbers, sweet cherry tomatoes, creamy mozzarella, fresh basil, and a drizzle of olive oil and balsamic vinegar.

Ingredients

  • 2 large cucumbers
  • 2 cups cherry tomatoes
  • 8 oz fresh mozzarella balls
  • Fresh basil leaves
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by washing cucumbers and cherry tomatoes thoroughly.
  2. Slice the cucumbers in half lengthwise and then into half-moons.
  3. Halve the cherry tomatoes.
  4. Drain the mozzarella if necessary and pat dry.
  5. Chop or tear the basil leaves.
  6. Combine everything in a large mixing bowl.
  7. Dress the salad with olive oil and balsamic vinegar, adding salt and pepper.
  8. Toss gently to coat everything evenly and let sit for 10-15 minutes before serving.
  9. Taste and adjust seasonings as needed.

Notes

For added crunch, consider using English cucumbers or pickling them for a tangy kick. Letting the salad sit for longer enhances the flavors.
