Juicy Street Corn Pasta Salad

A vibrant pasta salad combining the flavors of street corn with fresh veggies and creamy dressing, perfect for summer gatherings.

  • 8 oz Pasta (Rotini or Penne)
  • 2 cups Corn (Fresh, Frozen, or Canned)
  • 1 Bell Pepper (Diced)
  • 1/2 Red Onion (Finely Chopped)
  • 1 Cup Cherry Tomatoes (Halved)
  • 1/4 Cup Cilantro (Chopped)
  • 1/4 Cup Mayonnaise
  • 1/4 Cup Sour Cream
  • 1 Tablespoon Lime Juice
  • Salt and Pepper to Taste

Instructions

  1. Cook the Pasta: Boil a large pot of salted water, add pasta, and cook according to package instructions (8-10 minutes) until al dente.
  2. Prep the Veggies: Dice the bell pepper and onion, halve the cherry tomatoes, and chop the cilantro. If using fresh corn, slice off the kernels.
  3. Drain and Rinse: Once cooked, drain pasta and rinse under cold water to cool it down.
  4. Mix the Dressing: In a large bowl, combine mayonnaise, sour cream, lime juice, salt, and pepper. Whisk until smooth.
  5. Toss It All Together: Add cooled pasta and veggies to the dressing, and gently mix to combine.
  6. Chill and Serve: Cover and refrigerate for at least 30 minutes before serving.

Notes

For a kick, add diced jalapeños or chili powder. Can be made gluten-free with gluten-free pasta or spiralized veggies.
