Kerala-Style Spicy Chicken

  • 1 kg chicken, cut into pieces
  • 2 tablespoons coconut oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2 medium onions, sliced
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 23 green chilies, slit
  • 2 tomatoes, chopped
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon red chili powder
  • 1 tablespoon coriander powder
  • Salt to taste
  • A handful of curry leaves
  • Fresh cilantro for garnish

Instructions

  1. Heat the coconut oil in a large pan or skillet over medium heat.
  2. Add mustard seeds and cumin seeds, letting them pop for about 30 seconds.
  3. Sauté the sliced onions until golden brown (around 10-15 minutes).
  4. Introduce minced garlic and ginger, cooking for a couple of minutes.
  5. Add green chilies and chopped tomatoes; mix well and let soften for about 5 minutes.
  6. Combine turmeric powder, red chili powder, and coriander powder, stirring for a couple of minutes.
  7. Add chicken pieces, season with salt, and cook for about 5 minutes until slightly browned.
  8. Simmer with curry leaves on low heat for about 30 minutes.
  9. Test the chicken for doneness by cutting a piece; juices should run clear.
  10. Garnish with fresh cilantro before serving.

Notes

Serve with steaming rice or warm naan bread to soak up the sauce. Adjust spice levels as needed.
