Lemon Butter Salmon with Crispy Potatoes and Broccoli

A vibrant meal featuring fresh salmon, crispy potatoes, and broccoli, all enhanced by a delicious lemon butter sauce.

  • 4 (6 oz) Salmon fillets
  • 1/4 cup Unsalted butter
  • 2 tablespoons Fresh lemon juice
  • 2 cloves Garlic, minced
  • Salt and pepper, to taste
  • Lemon slices, for garnish
  • Fresh parsley, chopped
  • 1.5 lbs Baby potatoes, halved
  • 3 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 lb Broccoli florets
  • 2 tablespoons Olive oil (for broccoli)
  • To taste Salt and pepper
  • 1 teaspoon Lemon zest (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine the halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the seasoned potatoes on a baking sheet and roast for about 20 minutes.
  4. Toss the broccoli florets with olive oil, salt, and pepper, then add to the baking sheet with potatoes.
  5. Melt the unsalted butter in a saucepan, then add minced garlic and sauté until fragrant. Stir in lemon juice and optional zest.
  6. Cook the salmon fillets in a skillet until crispy and golden, spooning lemon butter sauce over them.
  7. Plate the potatoes and broccoli, top with salmon, drizzle with lemon butter sauce, and garnish with lemon slices and parsley.
