Lemon Lavender Dream Cake

  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup buttermilk
  • 3 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1 tablespoon dried culinary lavender
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your cake pans by greasing and flouring two 9-inch round pans.
  3. Mix dry ingredients: whisk together the flour, baking powder, and salt in a medium bowl. Set aside.
  4. Creme the softened butter and granulated sugar in a large mixing bowl until light and fluffy, about 3-4 minutes.
  5. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  6. Incorporate the buttermilk, lemon juice, lemon zest, and dried lavender, stirring until combined.
  7. Combine the flour mixture into the wet ingredients gradually, mixing until just combined.
  8. Pour the batter evenly into the prepared cake pans.
  9. Bake for 25-30 minutes, or until a toothpick comes out clean.
  10. Cool the cakes in the pans for 10 minutes, then invert onto a wire rack to cool completely.
  11. Frost with your favorite buttercream or lemon lavender cream cheese frosting when cooled.
