Lime Cheesecake Fluff

A refreshing no-bake dessert that combines creamy cheesecake flavors with zesty lime for a delightful treat.

  • 8 ounces Cream Cheese, softened
  • 2 tablespoons Lime Zest
  • 2 tablespoons Lime Juice
  • 1 cup Powdered Sugar
  • 1 teaspoon Vanilla
  • 1 cup Heavy Whipping Cream
  • 2 cups Miniature Marshmallows
  • 2 drops Green Food Coloring (optional)
  • 1 cup Graham Cracker Crumbs
  • 4 tablespoons Butter, melted
  • 2 tablespoons Sugar

Instructions

  1. Combine the graham cracker crumbs, melted butter, and sugar in a bowl until moistened.
  2. Press down into the bottom of a pie dish to form a crust.
  3. Chill the crust in the refrigerator.
  4. Beat the cream cheese until smooth and creamy.
  5. Add lime zest, lime juice, and vanilla, mixing until incorporated.
  6. Whip the heavy cream until stiff peaks form.
  7. Fold the whipped cream into the cream cheese mixture.
  8. Incorporate the miniature marshmallows and green food coloring if using.
  9. Pour the filling onto the chilled crust.
  10. Chill for at least 4 hours or overnight.

Notes

For a tropical twist, use coconut cream instead of heavy whipping cream. Best served chilled.
