  • 4 sweet potatoes
  • 1 can chickpeas (drained and rinsed)
  • 1 cup feta cheese, crumbled
  • 1 cup mixed vegetables (bell peppers and zucchini)
  • 1/4 cup fresh herbs (parsley or cilantro)
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the sweet potatoes by rinsing and poking holes in them.
  3. Roast the sweet potatoes for about 45 minutes or until tender.
  4. Prep the filling by combining chickpeas, vegetables, feta, herbs, lemon juice, olive oil, and seasoning in a bowl.
  5. Check the sweet potatoes and let them cool slightly before cutting in half.
  6. Stuff each potato with the chickpea mixture.
  7. Return the stuffed potatoes to the oven for an additional 10-15 minutes.
  8. Garnish and serve with fresh herbs and lemon juice.
