Pineapple Kiwi Salad

A refreshing and vibrant salad combining juicy pineapple, tangy kiwi, and zesty lime dressing, perfect for summer gatherings.

  • 1 ripe fresh pineapple
  • 2 ripe kiwis
  • 1/4 cup fresh mint, chopped
  • 1/4 cup lime juice
  • 2 tablespoons honey (optional)
  • 1/4 cup coconut flakes (optional for garnish)

Instructions

  1. Prepare the pineapple by cutting off the top and bottom, then slice off the rind.
  2. Cut the pineapple into quarters and remove the core. Chop into bite-size pieces.
  3. Prep the kiwis by cutting off the ends and scooping out the flesh. Dice into similar-sized pieces as pineapple.
  4. Rinse the mint leaves, pat them dry, and slice into thin ribbons.
  5. Make the dressing by combining lime juice and honey in a small bowl.
  6. Combine pineapple, kiwi, and mint in a large bowl. Drizzle with the lime-honey dressing and gently toss.
  7. Chill for at least 30 minutes before serving to enhance flavors.

Notes

Add mint just before serving to maintain its color and flavor. Can be made ahead of time.
