Quick Mediterranean Chicken Tacos

  • 1 lb Chicken Breast
  • 2 tbsp Olive Oil
  • 2 cloves Garlic, minced
  • 1 tsp Cumin
  • 1 tsp Paprika
  • Salt & Pepper, to taste
  • 4 Tortillas (corn or flour)
  • 1 Cucumber, diced
  • 1 Tomato, diced
  • 1/2 Red Onion, diced
  • 1/2 cup Feta Cheese, crumbled
  • 1/4 cup Kalamata Olives, pitted
  • 1/2 cup Tzatziki Sauce

Instructions

  1. Prep the chicken by dicing into bite-sized pieces and marinating with olive oil, garlic, cumin, paprika, salt, and pepper for 15-20 minutes.
  2. Sizzle the marinated chicken in a large skillet over medium-high heat for 7-10 minutes until golden brown.
  3. Prep the toppings by dicing cucumber, tomato, and red onion.
  4. Heat the tortillas in a hot skillet for about 30 seconds on each side or microwave for 20 seconds.
  5. Assemble the tacos by layering the cooked chicken, diced vegetables, feta cheese, olives, and tzatziki sauce in the warm tortillas.
  6. Dig in and enjoy with a squeeze of fresh lemon juice.
