  • 1 ripe pineapple, peeled and diced
  • 2 cucumbers, diced
  • 1 red bell pepper, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Gather all your ingredients. Cut the ends off your pineapple, then stand it upright and slice off the skin. Cut the pineapple into quarters, remove the core, and then dice it into bite-sized pieces.
  2. Dice the cucumbers: Wash and dry your cucumbers. Cut them in half lengthwise and remove the seeds if they’re seedy. Dice them similarly to the pineapple.
  3. Chop the bell pepper and onion: Cut the red bell pepper into small dice, and thinly slice the red onion. Make these uniform in size for balance.
  4. Mix those flavors: In a large mixing bowl, combine the diced pineapple, cucumbers, bell pepper, and sliced red onion. Add the chopped cilantro on top.
  5. Dress the salad: Squeeze the juice of two limes over the salad, then season with salt and pepper. Mix gently to coat everything evenly.
  6. Chill and serve: If you have time, let the salad chill in the refrigerator for about 30 minutes. Serve and enjoy!

Notes

Great for meal prep! Just add lime juice and salt right before serving to keep everything fresh and crunchy.
