Roasted Miso Chicken Thighs

A flavorful dish featuring chicken thighs marinated in a sweet and savory miso sauce, roasted to golden perfection.

  • 3 tablespoons white miso paste
  • 2 tablespoons brown sugar
  • 2 teaspoons rice vinegar
  • 2 tablespoons softened butter
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon ground ginger (or 1 teaspoon freshly grated)
  • ¼ teaspoon black pepper
  • 1 ½ lb boneless skinless chicken thighs
  • Green onions for serving (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine the miso paste, brown sugar, rice vinegar, softened butter, red pepper flakes, ground ginger, and black pepper in a mixing bowl and whisk until smooth.
  3. Pat the chicken thighs dry with paper towels, place them in a bowl or bag, and pour the marinade over. Massage the marinade into the chicken.
  4. Bake the chicken thighs skin-side up in a baking dish for about 25-30 minutes, until golden brown and the internal temperature reaches 165°F (75°C).
  5. Let the chicken rest for 5-10 minutes.
  6. Sprinkle with chopped green onions before serving.

Notes

For an extra touch, drizzle with sesame oil before serving. Adjust sweetness or spice in the marinade to your preference.
