Roasted Strawberry Whipped Ricotta Toast

A delightful combination of crispy toast topped with sweet, caramelized strawberries and creamy whipped ricotta, perfect for breakfast or a snack.

  • 1 tablespoon honey
  • 1 teaspoon balsamic vinegar
  • 1 cup ricotta cheese
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 4 slices of bread (your choice)
  • Mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and slice the strawberries in half or quarters.
  3. Create the marinade by tossing strawberries with honey and balsamic vinegar.
  4. Spread the strawberries on a lined baking sheet.
  5. Roast for about 15-20 minutes until bubbly and caramelized.
  6. Combine ricotta, powdered sugar, and vanilla in a mixing bowl.
  7. Whip the mixture until creamy and fluffy.
  8. Taste and adjust sweetness if necessary.
  9. Toast the bread until golden brown and brush with olive oil.
  10. Spread the whipped ricotta on each slice.
  11. Top with roasted strawberries and drizzle any remaining juices.
  12. Garnish with fresh mint leaves and enjoy!

Notes

For a vegan option, substitute honey with agave syrup or maple syrup.
