Rotisserie Chicken Broccoli Pasta

A quick and creamy pasta dish featuring rotisserie chicken, fresh broccoli, and a luxurious cheese sauce, perfect for busy weeknights.

  • 8 ounces pasta (penne or fusilli)
  • 2 cups broccoli florets
  • 2 cups rotisserie chicken, shredded
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
  2. Prepare the broccoli: Chop broccoli into bite-sized florets and either steam over the pasta or blanch in boiling water for 3-4 minutes. Drain and set aside.
  3. Sauté the garlic: In a large skillet, heat olive oil over medium heat and sauté minced garlic for about a minute until fragrant.
  4. Create the sauce: Pour in the heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese until melted.
  5. Combine all good things: Add the shredded chicken and blanched broccoli to the skillet, stirring until heated through. Season with salt and pepper.
  6. Toss the pasta in the sauce: Gently toss the cooked pasta in with the sauce, broccoli, and chicken. Let it sit for a couple of minutes on low heat.
  7. Serve and enjoy: Remove from heat and garnish with extra Parmesan and cracked black pepper. Serve warm.

Notes

Feel free to add spinach or spices such as red pepper flakes for extra flavor.
