Spicy Cashew Chicken

A delightful dish of crispy chicken tossed in a sweet and spicy sauce, complemented by crunchy cashews and vibrant vegetables.

  • 1 pound Chicken Breast
  • 3/4 cup Raw Cashews
  • 1 red Bell Pepper
  • 1 green Bell Pepper
  • 3 Green Onions, chopped
  • 2 cloves Garlic, minced
  • 1-inch piece Ginger, minced
  • 1/2 cup Soy Sauce
  • 3 tablespoons Honey
  • 12 tablespoons Sriracha or Chili Paste
  • 1/4 cup Cornstarch
  • Vegetable Oil (for frying)

Instructions

  1. Prepare the chicken by cutting it into bite-sized pieces.
  2. Coat the chicken in cornstarch until evenly coated.
  3. Heat vegetable oil in a skillet over medium-high heat.
  4. Fry the chicken for 4-5 minutes per side until golden and crispy.
  5. Stir-fry the bell peppers, garlic, and ginger for 3-4 minutes until tender-crisp.
  6. Make the sauce by whisking together soy sauce, honey, and sriracha.
  7. Combine the fried chicken with the vegetables and pour the sauce over.
  8. Finish by mixing in cashews and green onions for the final touch.

Notes

Serve over rice or quinoa and garnish with extra cashews and sesame seeds.
