Spicy Cucumber Salad

A refreshing salad that captures the perfect blend of freshness, crunch, and a delightful kick.

Ingredients

  • 8 mini or Persian cucumbers
  • 1 green onion
  • Sesame seeds
  • 1 ½ tbsp low-sodium soy sauce
  • 1 ½ tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp honey or maple syrup
  • 2 large garlic cloves (minced)
  • 1 tsp crushed red chili flakes

Instructions

  1. Prepare the cucumbers by washing them under cold water and slicing them thinly.
  2. Combine the sliced cucumbers, green onions, and sesame seeds in a large mixing bowl.
  3. Make the dressing by whisking together soy sauce, rice vinegar, sesame oil, honey, garlic, and chili flakes.
  4. Dress the salad by pouring the dressing over the cucumber mixture and mixing gently.
  5. Let it chill in the refrigerator for at least 15-20 minutes.
  6. Plate and serve the salad, garnishing with additional sesame seeds and herbs if desired.

Notes

The longer the salad sits, the more pronounced the flavors will become. It can be made a day in advance.
