Sticky Chicken Bowls

A flavorful dish featuring tender chicken, crisp veggies, and jasmine rice, all enveloped in a sticky sauce.

  • 3 large chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic, minced
  • 2 tbsp sriracha
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder
  • 2 tbsp water
  • 1/2 cup mayo
  • 23 tbsp water (for mayo)
  • 2 cups uncooked jasmine rice
  • 2 small heads broccoli, chopped
  • Sesame seeds for topping

Instructions

  1. Slice the chicken breasts into strips.
  2. Toss the chicken strips with olive oil, salt, pepper, chili powder, smoked paprika, onion powder, and oregano.
  3. Heat a large skillet over medium-high heat and add olive oil.
  4. Sear the chicken strips in a single layer for about 5-7 minutes until golden brown.
  5. Flip the chicken and cook for another 5 minutes until done.
  6. Whisk together soy sauce, honey, rice vinegar, minced garlic, sriracha, sesame oil, and ground ginger.
  7. Pour the sticky sauce over the chicken and bring to a simmer.
  8. Mix arrowroot powder with water and add to the pan to thicken the sauce for about 2-3 minutes.
  9. Cook the jasmine rice according to package instructions.
  10. Blanch the chopped broccoli in boiling water for 2-3 minutes.
  11. Combine mayo, sriracha, and water for the spicy drizzle.

Notes

Feel free to substitute chicken with diced tofu or tempeh for a vegetarian option. Adjust sriracha based on spice tolerance.
