A stunning Mixed Berry Citrus Tart that celebrates spring flavors with fresh berries and zesty citrus.

  • 1 ½ cups all-purpose flour
  • ½ cup powdered sugar
  • ½ cup cold unsalted butter, cubed
  • 23 tablespoons cold water
  • 2 lemons, zest and juice
  • 1 orange, zest and juice
  • 3 eggs
  • ½ cup granulated sugar
  • ½ cup heavy cream
  • 1 cup heavy cream (for topping)
  • 2 tablespoons powdered sugar (for topping)
  • Fresh berries (strawberries, blueberries, raspberries)
  • Fresh mint (for garnish)

Instructions

  1. Prepare Your Tart Crust: In a mixing bowl, whisk together flour and powdered sugar. Cut in the cubed butter until it resembles coarse crumbs. Slowly add cold water until dough holds together. Chill for at least 30 minutes.
  2. Roll it Out: Roll out the chilled dough and fit it into a tart pan. Prick the bottom with a fork. Line with parchment paper, add weights, and blind bake at 375°F (190°C) for 15-20 minutes.
  3. Prepare the Citrus Filling: In a bowl, combine the zest and juice of lemons and orange. In another bowl, whisk together eggs and sugar until pale, then mix in citrus juices and heavy cream.
  4. Bake the Filling: Pour filling into the crust and bake at 350°F (175°C) for 25-30 minutes until slightly jiggly in the center.
  5. Get Whipping: Beat heavy cream with powdered sugar and vanilla extract until soft peaks form.
  6. Assemble and Serve: Cool tart completely, arrange fresh berries on top, and finish each slice with whipped cream and a mint garnish.

Notes

Feel free to use frozen berries if fresh ones are unavailable. Make the whipped cream ahead of time to save time during serving.
