The Perfect Summer Corn Salad

A vibrant and refreshing corn salad perfect for summer gatherings.

Ingredients

  • 2 cups fresh corn kernels
  • 1 avocado, diced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Corn: Shuck the fresh corn, then grill, boil, or roast until slightly charred or tender.
  2. Dice Your Veggies: While the corn cools, chop the avocado, red bell pepper, and red onion.
  3. Halve the Tomatoes: Slice cherry tomatoes in half.
  4. Mix it All Together: Combine corn, avocado, bell pepper, tomatoes, and onion in a large bowl.
  5. Dress the Salad: Squeeze lime juice and drizzle olive oil over the mix.
  6. Season to Taste: Adjust with salt and pepper.
  7. Garnish and Chill: Top with cilantro and let sit for 15-30 minutes to meld flavors.

Notes

This salad is even better if allowed to marinate in the fridge for a while. Perfect for barbecues or as a refreshing side dish.
