Authentic Italian Tiramisu

Experience the classic flavors of Italy with this delightful authentic tiramisu, featuring creamy mascarpone, espresso, and ladyfingers, all dusted with cocoa powder.

  • 6 large eggs, separated
  • ½ cup (100 g) granulated sugar
  • 17.6 ounces (500 g) full-fat mascarpone cheese, chilled
  • 1½ cups (360 ml) freshly brewed espresso, cooled
  • 1 package (7 ounces / 200 g) Italian Savoiardi ladyfingers (about 2430 biscuits)
  • Unsweetened cocoa powder, for dusting
  • 2 tablespoons Marsala wine or dark rum

Instructions

  1. Prepare the espresso: Start by brewing your espresso or strong coffee. Allow it to cool completely.
  2. Separate the eggs: In a large mixing bowl, separate the egg yolks from the whites.
  3. Beat the egg yolks and sugar: Add the sugar to the yolks and whisk until pale and creamy (about 5 minutes).
  4. Incorporate the mascarpone: Gently fold the chilled mascarpone cheese into the egg yolk mixture.
  5. Whip the egg whites: In a clean bowl, beat the egg whites until they form stiff peaks.
  6. Combine the mixtures: Carefully fold the whipped egg whites into the mascarpone mixture.
  7. Prepare the dipping solution: In a shallow dish, mix your cooled espresso with the Marsala wine or dark rum.
  8. Dip the ladyfingers: Briefly dip each ladyfinger into the espresso mixture.
  9. Layer it up: In your serving dish, place a layer of soaked ladyfingers, then half of the mascarpone mixture, and repeat.
  10. Chill out: Cover and refrigerate for at least 4-6 hours, preferably overnight.
  11. Dust with cocoa: Right before serving, dust the top with unsweetened cocoa powder.

Notes

For best flavor, let the tiramisu sit overnight. You can also experiment with different flavors such as adding nutty chocolate or berry varieties!
