  • 2 tablespoons Olive Oil
  • Salt and Pepper to taste
  • Wooden Skewers, soaked in water for 30 minutes
  • 1/2 cup Mayonnaise
  • 1/4 cup Sweet Chili Sauce
  • 1 teaspoon Sriracha (adjust to taste)
  • 1 tablespoon Lime Juice
  • Chopped Green Onions for garnish

Instructions

  1. Prepare the Chicken: Cut the chicken breast into bite-sized cubes, about 1-1.5 inches each. Discard any excess fat.
  2. Marinade with Olive Oil: In a bowl, drizzle chicken with olive oil and toss until evenly coated.
  3. Soak the Skewers: Soak wooden skewers in water for about 30 minutes.
  4. Assemble Your Skewers: Thread chicken onto soaked skewers, leaving space between each piece.
  5. Make the Bang Bang Sauce: Whisk together mayonnaise, sweet chili sauce, Sriracha, and lime juice in a bowl.
  6. Preheat the Grill: Fire up the grill to medium-high heat.
  7. Grill the Skewers: Cook skewers on the grill for about 5-7 minutes per side until internal temperature reaches 165°F (75°C).
  8. Serve and Drizzle: Remove skewers and let rest. Drizzle with Bang Bang sauce and garnish with green onions.

Notes

For added flavor, feel free to add spices or alternate chicken with vegetables like bell pepper or zucchini on skewers.
