  • 2 cups cooked chicken, shredded
  • 1/2 cup BBQ sauce
  • 1 red onion, diced
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cheddar cheese, shredded
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 teaspoon smoked paprika
  • 2 green onions, sliced (for garnish)

Instructions

  1. Prep your ingredients by washing and dicing your sweet potatoes and chopping the red onion.
  2. Sauté the sweet potatoes in a skillet with olive oil, salt, black pepper, and smoked paprika for 10-15 minutes.
  3. Add the red onion and corn, cooking for another 5-7 minutes until the onions soften.
  4. Incorporate the shredded chicken and BBQ sauce, simmering for 5 minutes.
  5. Melt cheddar cheese over the top, cover until melted, about 2-3 minutes.
  6. Garnish with green onions and serve.

Notes

For a vegetarian option, substitute chicken with chickpeas or tofu. This dish is best served directly from the skillet.
