The Ultimate Beef Birria Tacos (Quesabirria)

  • 2 lbs beef (chuck roast or short rib)
  • 4 dried guajillo chilies
  • 2 dried pasilla chilies
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt to taste
  • 2 cups beef broth
  • 8 corn tortillas
  • 2 cups cheese (like Oaxaca or mozzarella)
  • Fresh cilantro, chopped (for garnish)
  • Chopped onions (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Rehydrate the chilies by placing them in a heat-proof bowl and pouring boiling water over them for about 10 minutes.
  2. Blend the softened chilies, chopped onion, garlic, cumin, oregano, and a pinch of salt in a blender with some soaking water until smooth.
  3. Sear the beef in a large pot with a drizzle of oil over medium-high heat until browned on all sides.
  4. Combine the blended chili mixture with the beef, add beef broth and remaining soaking liquid, then simmer for about 3 hours.
  5. Shred the beef with two forks once tender, then return it to the pot to absorb the flavors.
  6. Prepare the tacos by heating tortillas, filling them with beef and cheese, and cooking until crispy.

Notes

Let the birria sit overnight for deeper flavors. Make sure to warm the tortillas just until crispy before assembling.
