Super Easy Lemon Bars

Delightful lemon bars with a perfect balance of tangy and sweet flavors, ideal for any occasion.

  • 1/2 cup Unsalted Butter (room temperature)
  • 1 cup All-Purpose Flour
  • 1/4 cup Powdered Sugar
  • 1/2 cup Lemon Juice (about 23 lemons)
  • 1 tbsp Lemon Zest (finely grated)
  • 3 Large Eggs (room temperature)
  • 1 1/2 cups Granulated Sugar
  • 1/2 cup All-Purpose Flour (sifted)
  • Powdered Sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Make the crust: In a medium mixing bowl, beat together your softened unsalted butter and powdered sugar until light and fluffy.
  3. Add 1 cup of all-purpose flour gradually and mix until the dough starts to form.
  4. Press the dough into a greased 9×9-inch baking pan evenly.
  5. Bake the crust for 15-20 minutes until lightly golden.
  6. Prepare the filling by whisking together eggs, granulated sugar, lemon juice, lemon zest, and 1/2 cup of flour until smooth.
  7. Pour the lemon filling over the warm crust.
  8. Bake again for 20-25 minutes until the filling is set and slightly jiggly in the center.
  9. Cool completely in the pan on a wire rack and dust with powdered sugar before slicing.
  10. Slice into squares or rectangles to serve.

Notes

These lemon bars are best served chilled and can be topped with whipped cream or fresh berries.
