Blueberry and Cherry Clafoutis

A delightful French dessert that hugs fresh blueberries and cherries in a sweet, custardy batter.

  • 2 cups blueberries
  • 2 cups pitted cherries
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • Butter (for greasing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9-inch pie plate by buttering it generously.
  3. Add the blueberries and pitted cherries evenly to the buttered dish.
  4. Whisk together the 4 large eggs in a large mixing bowl until frothy.
  5. Mix in 1 cup of milk and 1/2 cup of sugar until dissolved.
  6. Add in the 1/2 cup of flour, 1 teaspoon of vanilla extract, and 1/4 teaspoon of salt; stir until just combined.
  7. Pour the batter over the berries in the baking dish.
  8. Bake for about 40-45 minutes until puffed and golden brown.
  9. Cool for 10-15 minutes before slicing and serving.

Notes

Dust with powdered sugar for an elegant touch; serve with whipped cream or vanilla ice cream.
