Big Mac Tacos

Crispy smash burger tacos that combine the flavors of the beloved Big Mac with the fun of tacos.

  • 1 pound ground beef (80/20)
  • 8 small flour tortillas
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 8 slices American cheese
  • ¾ cup shredded iceberg lettuce
  • ½ cup dill pickle chips
  • ¼ cup finely chopped white onion
  • 1 tablespoon neutral oil (for skillet)
  • ¾ cup mayonnaise
  • 3 tablespoons ketchup
  • 2 tablespoons yellow mustard
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon white vinegar
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions

  1. Prepare the Beef: In a large skillet, heat your neutral oil over medium-high heat. Once hot, add the ground beef and break it up with a spatula. Season with kosher salt and black pepper.
  2. Smash and Sizzle: Once the beef is in the pan, press it down with your spatula to smash it flat. This technique gets that crispy edge.
  3. Add Cheese: Once the beef is mostly cooked through, lay a slice of American cheese over each patty and cover the skillet to let the cheese melt.
  4. Warm the Tortillas: In another skillet, heat the flour tortillas over medium heat for about 30 seconds on each side until warm and pliable.
  5. Assemble the Tacos: Take a warm tortilla, layer in a crispy beef patty with melted cheese, and pile on your toppings.
  6. Make the Special Sauce: In a small bowl, mix together mayonnaise, ketchup, yellow mustard, relish, white vinegar, paprika, garlic powder, and onion powder.
  7. Dress the Tacos: Drizzle that special sauce over your assembled tacos or serve it on the side as a dip.
