A comforting and creamy soup made with fresh broccoli, rich cheddar cheese, and aromatic spices, perfect for chilly days.

Ingredients

Scale
  • 4 cups Broccoli, chopped
  • 1 cup Carrots, diced
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Chicken or Vegetable Broth
  • 1 cup Heavy Cream
  • 2 cups Cheddar Cheese, shredded
  • Salt and Pepper to taste
  • 2 tablespoons Olive Oil

Instructions

  1. Prep Your Ingredients: Start by washing and chopping all your veggies.
  2. Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the garlic and cook for an additional minute.
  3. Add the Carrots and Broccoli: Toss in the diced carrots and cook for about 3 minutes. Then, add the broccoli.
  4. Pour in the Broth: Add the broth, covering the vegetables. Bring to a gentle boil, then reduce heat and let it simmer for about 10 minutes.
  5. Incorporate the Cream: Once tender, add the heavy cream and stir well. Warm through for another 5 minutes.
  6. Add the Cheese: Gradually stir in the cheddar cheese, allowing it to melt.
  7. Season: Taste and add salt and pepper as desired.
  8. Serve: Ladle into bowls and garnish with extra cheese or croutons.
