  • 2 cups all-purpose flour
  • 2 tablespoons Cajun seasoning

  • Garlic aioli

Instructions

  1. Tenderize the chicken: Place each chicken breast between two sheets of plastic wrap and pound to an even thickness.
  2. Marinate in buttermilk: Cover chicken with buttermilk and refrigerate for at least an hour.
  3. Prepare the dredging station: Whisk together flour, Cajun seasoning, salt, and pepper in a shallow dish.
  4. Heat the oil: Add oil to a skillet and heat until shimmering.
  5. Dredge the chicken: Remove chicken from buttermilk, dredge in seasoned flour, and shake off excess.
  6. Fry the chicken: Fry each piece in hot oil until golden brown, about 5-7 minutes per side.
  7. Drain and rest: Transfer cooked chicken to paper towels to drain excess oil.
  8. Toast the buns: Quickly toast sandwich buns in the same pan until golden.
  9. Assemble your sandwich: Layer chicken, lettuce, tomato, and garlic aioli on the bun.

Notes

For a spicy twist, add sriracha to the garlic aioli. For a vegetarian version, use eggplant or portobello mushrooms.
