Cheese Gougères

Deliciously cheesy puffs that are perfect for any occasion, these cheese gougères are sure to delight your guests with their airy texture and rich flavor.

  • 3/4 cup water
  • 5 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1/8 teaspoon finely ground black pepper
  • 1 cup all-purpose flour
  • 4 large eggs
  • 3/4 cup grated mozzarella cheese
  • 1/4 teaspoon minced Italian parsley
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Prepare the Butter Mixture: In a medium saucepan, combine the water, butter, salt, and black pepper. Heat this over medium-high heat until the butter is melted and the mixture is boiling.
  2. Add the Flour: Once boiling, add the flour all at once. Stir briskly until the dough pulls away from the sides of the pan, forming a ball.
  3. Transfer to a Mixing Bowl: Remove the pan from heat and transfer the dough to a mixing bowl. Allow it to cool for about 5 minutes.
  4. Add the Eggs: Add the eggs one at a time, mixing well after each addition until smooth.
  5. Incorporate the Cheese and Herb: Fold in the mozzarella, Parmesan cheese, and parsley until well combined.
  6. Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  7. Scoop and Shape the Dough: Drop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake: Place the gougères in the oven and bake for about 20-25 minutes or until puffed and golden brown.
  9. Cool and Serve: Remove them from the oven and let them cool on a wire rack for a minute. Enjoy warm!

Notes

Serve immediately for the best texture, or keep them warm in a low oven until ready to serve. Leftover gougères freeze beautifully.
